Elizabeth McLean's Papaya Salad

During her Residency, Elizabeth McLean discovered this incredible offering of fruit from the land at the Batan wet market. Sweet and succulent, papaya grown in the Philippines does not require too much more embellishment.

Cut ripe papaya lengthwise.
Scoop out the seeds.
Peel off the skin.
Cut the halves into cubes.

Add chopped fresh green herbs.
Toss with shredded coconut and honey.
Decorate with nuts.
